Thursday Leftovers: Roasted Garlic Potatoes

Want something quick and easy to throw together for a side dish? Always.  At least I always seem to be looking for something quick & easy to make.  This recipe for garlic roasted potatoes is not only easy and quick, but it only requires a few ingredients too.  It basically requires you just to toss ingredients together and then throw them in the oven.  Plus, there is no need to peel the potatoes which is already one reason to celebrate!

Ingredients:
  • 2 lbs. red potatoes
  • 3 tbs olive oil
  • 1 tbs seasoned salt
  • 1 tbs pepper
  • 1 tbs paprika
  • 6 garlic cloves minced
  • 1/3 cup minced parsley
Game Plan:

1. Clean potatoes but do not peel.

2. Cut potatoes into wedges.

3. Pour/sprinkle oil, salt, pepper, paprika, & garlic onto potatoes.

I’m going to be honest, I did not measure any of these ingredients except the garlic.  I only put measurement amounts at the top for those of you who are uncomfortable sprinkling a bit here and there.  I give you permission to season as you see fit.

Toss seasonings to coat potatoes evenly

4. Place the potatoes in a 9×13 in. baking pan. Arrange the potatoes so the skin side is facing up. This will create a nice crust on the cut side as it bakes.

5. Bake, uncovered, at 375° for 30-40 minutes or until tender, stirring and rotating potatoes a couple times while baking.

6. Sprinkle with parsley.
